Gingerbread Tofu Cookies
Put these ingredients in a blender
and mix until creamy:
1 cup molasses
1 cup Mori Nu soft tofu
1/3 cup cold pressed canola
oil
Mix these ingredients in a bowl:
3 1/2 cups whole grain flour
3 tsp ginger
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
1/4 tsp allspice
1/8 tsp cloves
1/8 tsp
nutmeg
Pour the dry ingredients into the wet and
mix until blended. Do not over mix. Chill the dough overnight.
Preheat oven to 350 degrees.
Roll out the dough to 1/4 inch
thickness. Cut cookies into desired shapes and bake for about 8
minutes.
